Summer desserts are kind of my love language when the weather heats up!

I love making treats that come together fast, taste amazing, and don’t require me cranking up the oven for hours.

Sometimes I make them for parties, sometimes I make them for friends, and sometimes I make them for just me to enjoy.

But no matter the occasion, these summer dessert recipes are zero fuss and absolutely delicious!

Here are some faves that should go straight on your summer list:

Summer Desserts for a Crowd

When you’ve got a backyard full of friends or a family potluck on the calendar, these desserts make it easy to share the love!

You’ll find a few options here that can hang out on the table without melting in ten seconds, too. Perfect for feeding everyone without stressing out.

1. Lemon Blueberry Sheet Cake

Start by whisking together oil, sugar, eggs, lemon zest, and lemon juice until smooth.

Stir in flour, baking powder, and salt, then fold in fresh or frozen blueberries coated in a bit of flour.

Pour into a greased sheet pan and bake at 350°F for about 30–35 minutes, until golden and springy.

Once cool, spread a tangy lemon glaze over the top while it’s still just a little warm.

2. Summer Berry Poke Cake

This cake is so easy and delicious!

Bake a vanilla or white boxed cake mix in a 9×13 pan and let it cool slightly.

Poke holes all over the top using the handle of a wooden spoon.

Pour in a warm berry gelatin mixture, letting it soak through, then chill the whole thing.

Spread with whipped topping and decorate with sliced strawberries, raspberries, and blueberries.

3. Strawberry Sugar Cookie Bars

Cream together butter and sugar, then beat in an egg, vanilla, and a splash of almond extract.

Add flour, baking powder, and salt, and press the dough into a lined 9×13 pan.

Bake until golden around the edges, then cool completely.

Spread with a whipped strawberry cream cheese frosting and slice into bars.

4. Raspberry Almond Cake

This one starts with a buttery almond batter made from flour, sugar, eggs, and almond extract.

Pour half into a round or square pan and drop spoonfuls of raspberry jam over top.

Add the rest of the batter and swirl gently with a knife before baking at 350°F.

Once cool, dust with powdered sugar or drizzle with almond glaze.

5. Cherry Slab Pie

Roll out pie crust to fit a rimmed baking sheet, pressing it into the corners and trimming the edges.

Pour in a homemade cherry filling (fresh or frozen cherries tossed with cornstarch, sugar, and lemon juice) or used canned.

I’m not here to judge!

Add a lattice crust or cut shapes from the top layer before brushing with egg wash.

Bake until bubbling and deeply golden.

6. Banana Pudding Trifle

Omg, this one is heaven!

Layer sliced bananas, vanilla pudding, and Nilla wafers in a deep glass dish or trifle bowl.

I usually start with pudding at the bottom, then build up with banana slices and cookies.

Repeat the layers until the dish is full, then top with whipped cream and crushed cookie crumbs.

Chill for a few hours so everything softens and melds.

7. Peach Cobbler with Biscuit Topping

Peel and slice fresh peaches, then toss them with sugar, cinnamon, and a bit of flour or cornstarch.

Pour into a buttered baking dish and let them sit while mixing the biscuit topping.

Spoon the dough over the fruit in rough scoops and bake until the peaches are bubbling and the biscuits are golden on top.

Serve warm with a scoop of vanilla ice cream.

8. Mixed Berry Crisp

Combine fresh or frozen berries with sugar, cornstarch, and a splash of lemon juice.

Pour into a deep baking dish and top with a crumble made from oats, brown sugar, flour, cinnamon, and cold butter cut into chunks.

Bake until the topping is crisp and the filling is bubbling at the edges.

Let it cool slightly before serving.

9. Chocolate Chip Cookie Bars

Cream butter and brown sugar until light and fluffy, then add eggs and vanilla.

Mix in flour, baking soda, salt, and a ton of chocolate chips.

Spread the thick dough into a greased 9×13 pan and bake until golden around the edges and just set in the middle.

Cool before slicing into squares so they don’t fall apart.

Summer Desserts for Kids

These fun little treats are made with picky eaters and little fingers in mind.

Most of these can be tossed together with ingredients you’ve probably already got at home.

10. Mini Peach Upside Down Cakes

Start by placing a slice of peach and a sprinkle of brown sugar in the bottom of each muffin tin well.

Mix a quick vanilla cake batter (flour, sugar, butter, egg, milk, and vanilla) and spoon it on top.

Or used boxed…again, no judgment! Whatever makes it easy for you.

Bake until puffed and golden, then let them rest for a few minutes.

Flip them out gently while still warm so the peaches stay in place.

11. Strawberry and Lemon Blondies

Mix melted butter, sugar, eggs, lemon zest, and juice in a bowl.

Stir in flour and salt, then fold in chopped fresh strawberries.

Spread the thick batter into a parchment-lined pan and bake until just set and slightly golden.

Let cool completely before slicing into squares so they don’t turn gooey.

12. Honey Peach Cream Cheese Cupcakes

These are so tasty, no wonder kids love them!

Cream together softened cream cheese, honey, and a little vanilla until smooth.

Spoon it into the center of vanilla cupcake batter layered in muffin tins.

Top with thin peach slices before baking so they bake right into the tops.

Dust with cinnamon sugar once cooled for an extra sweet finish.

13. Fruit Pizza

What kid is going to say “no” to pizza in any form?

Bake a sugar cookie crust in a round pizza pan until just golden, then cool completely.

Mix cream cheese with powdered sugar and a little lemon juice for the “sauce.”

Spread over the crust and layer with sliced strawberries, kiwi, blueberries, or any colorful combo you’ve got.

Brush with a little warm apricot jam to make it shine.

14. Peach Sorbet

Sorbet is so easy to make and so freaking delicious!

Slice ripe peaches and freeze them solid on a tray.

Blend the frozen fruit with a splash of lemon juice and a spoonful of maple syrup until smooth and creamy. I

f the blender needs help, add a bit of water at a time.

Serve right away or freeze again for a firmer texture.

15. Strawberry Oatmeal Crumble Bars

Combine oats, flour, brown sugar, and melted butter to form a crumbly dough.

Press most of it into a lined pan and top with strawberry jam or chopped fresh berries.

Sprinkle the rest of the oat mix over top and bake until golden and bubbling.

Let them cool before cutting to keep the layers intact.

16. Rainbow Jello Cups

These are so much fun!

Layer different colors of Jello in small clear cups, letting each layer set in the fridge before adding the next.

Use a turkey baster or squeeze bottle to keep layers neat and even.

Once all the layers are done, top with whipped cream or a dollop of Cool Whip.

Keep them chilled until ready to serve.

17. Frozen Yogurt Bark with Berries

Fun and healthy!

Spread vanilla yogurt onto a parchment-lined baking sheet in an even layer.

Sprinkle with fresh berries, granola, mini chocolate chips, or whatever toppings sound fun.

Freeze until completely firm, then break into pieces.

Store in a freezer-safe container with parchment between layers.

Easy No-Bake Summer Desserts

I’m not about to turn the oven on in July unless it’s an emergency!

These no-bake options are my go-tos when it’s way too hot to cook but I still want something sweet and satisfying.

18. Strawberry Tiramisu

Dip some ladyfingers quickly in strawberry juice or a mix of mashed berries and a splash of lemon.

Layer them in a dish with whipped mascarpone and sweetened whipped cream.

Add another layer of dipped cookies and more cream, then finish with fresh strawberry slices on top.

Chill for a few hours so the layers set and soften.

19. Blueberry Cream Cheese Bars

Mix crushed graham crackers with melted butter and press into the bottom of a square pan.

Beat cream cheese with powdered sugar and a touch of lemon, then fold in whipped topping.

Spread the filling over the crust and swirl in blueberry jam or compote.

Refrigerate until firm, then cut into bars.

20. No-Bake Strawberry Icebox Cake

This one is definitely a favorite in the summertime!

Layer graham crackers, whipped cream, and sliced strawberries in a baking dish.

Repeat the layers until the dish is full, ending with cream and berries on top.

Cover and refrigerate for at least 4 hours or overnight so the crackers soften into a cake-like texture.

I use a serrated knife to slice cleanly.

21. Pineapple Cream Dessert

Looking for a tropical getaway in a cup?

Combine crushed pineapple (with juice), instant vanilla pudding, and whipped topping in a bowl.

Stir until smooth and spoon into a graham crust or individual dessert cups.

Top with more whipped cream and a sprinkle of toasted coconut.

Chill for at least an hour before serving.

22. Key Lime Pie Bars

Whisk sweetened condensed milk, key lime juice, and softened cream cheese until smooth.

Pour over a graham cracker crust in a square pan and spread evenly.

Freeze until firm, then cut into squares with a hot knife for clean edges.

Garnish with whipped cream and a little lime zest.

23. Summer Berry Dessert Lasagna

Start with a graham cracker base layered in a 9×13 pan and press it down with something flat.

Mix softened cream cheese, powdered sugar, and whipped topping for the first layer, then spread it over the crust.

Add a layer of berry pie filling or macerated fresh berries, then top with vanilla pudding mixed with more whipped topping.

Finish with a final layer of whipped topping and extra berries scattered on top.

Chill for at least 4 hours before slicing.

24. No-Bake Cheesecake Cups

Stir softened cream cheese, vanilla, and powdered sugar together until smooth.

Fold in whipped topping and spoon over crushed cookies layered in small jars or ramekins.

Top with fruit, jam, or mini chocolate chips.

Chill for at least an hour before serving.

25. Orange Creamsicle Bars

These taste like a dream!

Crush vanilla wafer cookies and stir them with melted butter to make a simple crust, then press into a lined square pan.

Whip together cream cheese, orange juice concentrate (thawed), and powdered sugar until smooth, then fold in whipped topping.

Spread the filling over the crust and smooth it out.

Freeze until firm, then slice into bars while still cold.

Keep them frozen and let them sit for a few minutes before serving.

26. Mason Jar S’mores

I love making up a few of these for bonfire nights!

Crush graham crackers and layer them with chocolate pudding and marshmallow fluff inside mason jars.

Repeat the layers and finish with extra fluff or mini marshmallows on top.

Screw on the lids and pop them in the fridge until it’s time to eat.

Sugar-Free Summer Desserts

Cutting back on sugar doesn’t mean skipping dessert, especially not in the summer!

These recipes lean on fruit, natural sweeteners, and clever swaps to keep things light but still tasty.

27. Blueberry Peach Tart

Start with a crust made from almond flour, coconut oil, and an egg, then press it into a tart pan and bake until lightly golden.

Let it cool while tossing sliced peaches and blueberries with lemon juice and a touch of stevia or monk fruit sweetener.

Arrange the fruit over the crust and chill. Brush with warmed sugar-free apricot jam for a glossy finish.

28. Raspberry Coconut Squares

Mix unsweetened shredded coconut, almond flour, eggs, and a sugar-free syrup or sweetener until it forms a sticky dough.

Press half into a lined pan, then spread raspberry chia jam or mashed berries across the top.

Add the remaining dough in dollops and press lightly.

Bake until golden and let cool before cutting.

29. Strawberry Lemonade Bars

Whisk together almond flour, butter, and powdered erythritol for a crust, then pre-bake until set.

Blend eggs, lemon juice, zest, and a sugar-free sweetener, then stir in blended strawberries.

Pour over the crust and bake until the filling jiggles slightly but doesn’t slosh.

Cool completely and dust with powdered monk fruit sweetener.

30. Strawberry Shortcake

You’ll never believe this strawberry shortcake is sugar free!

Slice fresh strawberries and toss them with a splash of lemon juice and a powdered sweetener of your choice.

For the shortcake, use almond flour, eggs, baking powder, and cream to make drop biscuits, then bake until golden.

Whip cream with vanilla and sweetener until fluffy.

Split the biscuits and layer with strawberries and cream.

31. Watermelon Ice Cream

This ice cream is so easy and so refreshing!

Cube seedless watermelon and freeze it solid on a baking sheet.

Blend the frozen chunks with canned coconut milk and a few drops of stevia or maple-flavored monk fruit syrup until smooth.

Transfer to a loaf pan and freeze again until scoopable.

Stir once or twice while freezing for a creamier texture.

32. Lemon Mousse Pie

Whisk together heavy cream, lemon juice, lemon zest, and powdered erythritol until light and fluffy.

Fold in a bit of softened cream cheese if you want extra richness.

Spoon the filling into a cooled almond flour crust or serve in cups.

Chill for several hours to set the mousse.
