Grilled Pineapple Chicken Skewers

There’s something about grilled pineapple that instantly makes any meal feel like summer.

I threw these skewers together last weekend and they disappeared before I even sat down.

The sweet charred fruit, sticky marinade, and tender bites of chicken hit all the right notes, especially with a side of coconut rice!

I love recipes like this because they’re low-effort but still feel a little special.

You just need a hot grill, a quick marinade, and a few fresh ingredients to make it happen.

Grilled pineapple chicken skewers are officially on my go-to list for easy weeknight dinners and casual cookouts.

These pineapple chicken kebobs are juicy, sweet, and just a little bit smoky from the grill.

They’re super easy to throw together and make a fun twist on basic grilled chicken.

Ingredients:

  • 1 ½ lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • ½ tsp chili flakes (optional)
  • Wooden or metal skewers

Instructions:

  1. In a bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, and chili flakes.
  2. Add the chicken pieces and toss to coat. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours).
  3. If using wooden skewers, soak them in water for 20–30 minutes.
  4. Thread chicken, pineapple, and bell pepper onto skewers, alternating ingredients.
  5. Preheat grill to medium-high heat and lightly oil the grates.
  6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  7. Serve hot with rice, slaw, or grilled veggies.

Can I make pineapple chicken kebabs in the oven?

Yes! Preheat your oven to 425°F and place the assembled kebabs on a lined baking sheet.

Bake for about 20–25 minutes, turning halfway through, until the chicken is cooked through and starting to caramelize.

Can I make pineapple chicken kebabs in the air fryer?

You can!

Set your air fryer to 380°F and cook the kebabs in batches for about 12–15 minutes, turning once halfway.

Just make sure the skewers fit your air fryer basket without crowding.

What happens if I don’t soak the skewers?

If you skip soaking wooden skewers, they can scorch or catch fire on the grill.

Soaking helps prevent that by keeping them from drying out too fast over high heat.

Bring the Heat with These Pineapple Chicken Skewers

These skewers are proof that simple ingredients can still bring big flavor.

They’re quick to prep, easy to grill, and always a crowd-pleaser.

Keep a pack of skewers handy because you’ll want to make these on repeat all summer long!
