There’s something about summer that makes me want to fill a pitcher with something cold, fruity, and just a little boozy!
Last weekend, I had a few co-workers over for an easy backyard hang, and these drinks were the real MVP.
They’re light, refreshing, and don’t take a ton of effort, which, let’s be real, is key when you’re trying to look cool while sweating through your tank top.
I like playing around with fresh herbs, citrus, and whatever’s already in my fridge.
These are grown-up drinks, but they don’t take themselves too seriously!
Here are a few favorites that’ll keep you and your friends chill all season long.
Watermelon Rosé Spritz

- 1 cup fresh watermelon juice (about 2 cups chopped watermelon, blended and strained)
- 1/2 cup chilled rosé
- 1/4 cup club soda
- Squeeze of lime
- Ice
Fill a glass with ice. Pour in the watermelon juice and rosé, then top it off with club soda. Add a quick squeeze of lime and give it a gentle stir. It’s basically summer in a glass—refreshing, pink, and way too easy to sip.
Frozen Pineapple Mojito Slush

- 1 1/2 cups frozen pineapple chunks
- 2 oz white rum
- 1/2 cup coconut water
- Juice of 1 lime
- Handful of fresh mint leaves
- Optional: 1 tsp honey
Toss everything into a blender and blitz until smooth and slushy. Taste it—if you want it sweeter, throw in a little honey. Pour into a chilled glass and pop in a sprig of mint for the vibe. It’s tropical, minty, and low-effort impressive.
Cucumber Lime Vodka Cooler

- 1/2 cucumber, sliced
- Juice of 1 lime
- 2 oz vodka
- 1 tsp agave or simple syrup
- Sparkling water
- Ice
Muddle the cucumber with lime juice and agave in a shaker. Add vodka and shake with ice, then strain into a tall glass filled with fresh ice. Top with sparkling water and a cucumber ribbon if you’re feeling fancy-ish. It’s clean, crisp, and perfect for hot afternoons.
Spiked Iced Hibiscus Tea

- 1 hibiscus tea bag
- 3/4 cup boiling water
- 1 oz tequila or white rum
- 1 tsp honey
- Juice of 1/2 orange
- Ice
Steep the tea bag in boiling water for about 5 minutes, then let it cool. Stir in the honey and orange juice, then add your liquor of choice. Pour over ice and garnish with an orange slice if you want. It’s floral, tart, and just strong enough to make things fun.
Peach Basil Sangria

- 1 ripe peach, sliced
- 1/2 bottle dry white wine (like Pinot Grigio)
- 1 oz peach schnapps
- Handful of fresh basil
- 1/2 cup club soda
- Ice
In a pitcher, muddle the peach slices with a few basil leaves. Pour in the wine and schnapps, then let it chill in the fridge for at least 30 minutes. Right before serving, add club soda and ice. Ladle into glasses with some peach and basil in each sip.
Boozy Arnold Palmer

- 1/2 cup strong brewed tea (black or green)
- 1/2 cup lemonade
- 1–2 oz bourbon or whiskey
- Ice
- Lemon wheel (optional)
Shake the tea, lemonade, and bourbon together with ice. Strain into a rocks glass over fresh ice. Add a lemon wheel if you’re feeling it. It’s sweet, smoky, and ridiculously easy.
Strawberry Lemon Fizz with Gin

- 1/2 cup fresh strawberries
- Juice of 1 lemon
- 2 oz gin
- 1 tsp sugar
- Club soda
- Ice
Muddle strawberries, lemon juice, and sugar in a shaker. Add gin and ice, shake well, then strain into a glass with more ice. Top with club soda and give it a quick stir. Tart, bubbly, and full of that first-picnic-of-summer energy.
Coconut Rum Cream Soda

- 2 oz coconut rum
- 1/2 cup vanilla soda or cream soda
- Splash of half-and-half or coconut milk
- Ice
Fill a glass with ice, add the coconut rum, and top with cream soda. Pour in a little half-and-half or coconut milk and stir slowly. It gets creamy and dreamy fast, so serve right away. Think adult float, minus the spoon.
Grapefruit Thyme Sparkler

- 1/2 cup fresh grapefruit juice
- 1–2 oz vodka
- 1 tsp thyme simple syrup (or muddled thyme + honey)
- Sparkling water
- Ice
Shake grapefruit juice, vodka, and syrup with ice. Strain into a chilled glass and top with sparkling water. Throw in a sprig of thyme or a grapefruit wedge for fun. It’s herbal, citrusy, and low-key fancy without the fuss.
Blackberry Bourbon Smash

- 1/4 cup blackberries
- Juice of 1/2 lime
- 2 oz bourbon
- 1 tsp maple syrup
- Ice
- Splash of ginger beer
Muddle the blackberries and lemon juice in a shaker. Add bourbon and maple syrup, shake with ice, then strain into a glass. Top with ginger beer and a few more blackberries. It’s bold, juicy, and totally porch-worthy.
